DESCRIPTION: Dried and crushes thyme tops. Thyme is a herb characterized by a strong and penetrating but very pleasing perfume. It is recommended to use sparingly to avoid masking the other flavours in the dish, both in recipes with meat and with fish. Its aroma is very pleasant and develops even more as the food cooks. Many dishes can be flavoured with thyme including roasts and stews using beef, sheep and game, from side dishes to potatoes, peas and beans, as well as soups and legumes. READY TO USE.
METHOD OF USE: Sprinkle a small quantity of dried thyme onto broths, soups, tortellini, risotto, in marinades for fish and meat, stuffings for game, on eggs, on bread and on pizza, on vegetables and mushrooms. It is preferable to add at the end of cooking in order to preserve the aroma.
STORAGE CONDITIONS: Store in a cool, dry place, away from the light.

Ingredients:
250g horse carpaccio
20g extra virgin olive oil
10g lemon juice
1 pinch of black pepper
3 pinches of dried thyme
Salt to taste
Lay out the horse carpaccio on a plate. Distribute the pinch of black pepper over the meat. Pour the oil into a bowl. Add the filtered lemon juice. Season with 3 pinches of thyme. Salt. Whisk the mixture until it emulsifies. Season the meat with the mixture and then leave to infuse for a couple of minutes before serving.
