Why choose PRIMI PIATTI PUMPKIN-CHIVE ?: The Preparati per PRIMI PIATTI line uses exclusively vegetables that we have grown and produced, controlled and monitored by our experts who guarantee a CLEAN product, that are therefore cultivated according to the standards of biologico-SANO (organic-clean). All of our vegetables are harvested during the ideal period of maturation and are dehydrated quickly after; this way, all of the organoleptic properties of the fresh produce are kept unchanged, which become concentrated and are then released during cooking. They offer the possibility to enjoy seasonal vegetables all year round with the same taste, colour, aroma and properties of those freshly picked.
Recipe recommended by : Penne pasta with pumpkin, pine nuts and sage
For: 4 people / preparation time: 15 mins / cooking time: 25 mins / difficulty: 2
– 320 grams of penne pasta
– 1 packet of Preparazione per Primi Piatti PUMPKIN SAGE
– ½ an onion
– 60 grams of pine nuts
– 10 sage leaves
– 1 glass of white wine
– 4 teaspoons of plant-based cream
– Extra virgin olive oil
– Salt and pepper
Pour the Pumpkin Chive mix into a bowl and cover with warm water. Give it enough time for the dehydrated vegetables to absorb all of the water they need to rehydrate, approximately 10/15 minutes. In the meantime, roughly chop the onion and put it in a pan with a drop of olive oil to cook until browned. Combine the sage leaves cut into strips. Once the pumpkin is rehydrated, combine in a pan with the onion and any water that was left in the bowl. Continue to cook, softening it from time to time with a bit of white wine. Cook the pasta in generously salted water. Drain whilst still al dente (keeping a bit of the water you cooked it in aside) and empty it into the pan with the pumpkin. Cook to a creamy consistency using the plant-based cream. Season with salt and pepper to taste. Separately, toast the pine nuts on a high heat for a couple of minutes. Plate up the dish and add the pine nuts to serve.
