SUGGESTED RECIPE from CondirSANO: VEGETARIAN MAYONNAISE
To prepare: 10-20 min | Difficulty: 1
- 150ml skimmed milk
- Finely chopped chives
- 1-2 tbsp flavoured vinegar with marigold
- 300ml oil: 150ml extra virgin olive oil and 150ml corn oil
Mix together all of the ingredients in a blender, including the CondirSANO flavoured vinegar with marigold, and blend for about 7 minutes; if the mayonnaise is not the right consistency add another spoonful of olive oil and continue to blend until you have reached the desirable conistency. At this point leave the mayonnaise to rest for about an hour in the fridge.
