- 125g extra virgin olive oil
- Flavoured salt with fennel
Prepare the dough by making a mound of flour on a pastry board. Add the oil and the flavoured salt with fennel. Form a dough with a fork in the centre of the mound of flour, add the fennel seeds and enough water to make the dough firm but elastic. Knead with force until the desired texture has been reached, before leaving to rest for at least 20 minutes under cling film. Divide the dough into small pieces and reform each piece into a small sausage. Join the two ends to form rounds at least 6cm in diameter and seal well with your finger. Bring some water to the boil and add a few rings at a time. Cook until they start to blister and leave to dry on a dry cloth. Transfer the rings onto a tray and cook in a pre-heated oven for around 30 minutes. When the fennel rings have a golden colour finish cooking, allow to cool. Store in an airtight container.
