– 1 packet of Preparati per Primi Piatti AUBERGINE TOMATO BASIL
– ½ an onion
– Vegan mozzarella
– 200ml water
– Sunflower oil
– Extra virgin olive oil
– Salt and pepper
– 200g of flour
– 300g boiled rice
Preparations: Revive the contents of the package in a cup with a bit of warm water of 10-15 minutes. In the meantime, cut up the vegan mozzarella into small cubes. Brown off the chopped onion with olive oil. Add the rehydrated aubergine, tomato and basil and cook whilst gradually adding water so that it doesn’t stick. Take a spoonful of the boiled rice and a wet spoon and flatten it on the palm of your hand. In the centre, put some of the sautéed vegetables and some of the diced vegan mozzarella. Cover with a second spoonful and create a little ball, working the rice with warm hands. For the batter, put the flour in a bowl and season to taste with salt, and steadily add the water whilst constantly, vigorously mixing with a whisk in order to avoid the formation of lumps. Roll the balls around one by one, first in the batter and then in the breadcrumbs. Heat the sunflower oil and fry them a few at a time until they are well browned. To be eaten nice and hot.
