METHOD OF USE: Scatter a handful of herb mix onto grilled meat and vegetables, during the process of marinating meat, onto bruschetta or cooked vegetables or as a seasoning for risotto or starter dishes in general. To be used in small quantities due to its intense flavour.

Ingredients:
• 4 medium chicken thighs
• Mixed aromatic herbs (sage, majoram, oregano, rosemary and mint)
• 1 lemon
• Salt to taste
Preparation: Clean the chicken thighs, removing the skin, and make 3 or 4 incisions per side with a smooth blade knife. Put the chicken thighs in a big bowl and add the crushed aromatic herbs, a couple of twists of salt and the juice of the lemon. Leave to rest for 15-20 minutes. After this time necessary to marinate the meat, take the chicken out of the bowl and, without cleaning them off, massage well for a couple of minutes. This step serves to tenderize the meat. Lay the chicken thighs down in a lightly oiled pan and put it the oven preheated to 180° for 40 minutes on fan-assisted mode, and then at 200° for another 10 minutes on grill mode.
